Cooking onboard: pancakes!



If there is something onboard Ambrym that we can't agree on is food. Different crew members, different diets... It's not always easy. But there is something that always makes everyone happy: PANCAKES!


We have made "pancake night" many times onboard: when we run out of fresh food, when we are many people, when we want something different or just when we feel like it!


Lloyd's pancakes are thinner, he will have to share them here another day. This is Ana's American style pancake recipe, it's easy and always so good!




You can make small pancakes but when we have to cook a lot of them we just make them as big as the pan allows.


The nicest part is sharing the table, where each one can choose his toppings, everything is allowed! Fresh fruit, honey, Nutella, syrup, cinnamon, sugar, lemon, marmalade, fresh cheese... what is your favourite one?


Ingredients:

  • 275g (2 cups) flour

  • 60g (3Tbsp) sugar

  • 1 1/2 tsp baking powder

  • 1 1/2 tsp baking soda

  • 1 1/4 tsp salt

  • 600ml (2 1/2 cups) buttermilk *

  • 2 eggs

  • 45g (3 Tbsp) melted butter or oil

*(you can make buttermilk by mixing 600ml of milk and 2 1/2Tbsp lemon juice)

* Tbsp= Tablespoon

* tsp= teaspoon




How to prepare it:

Whisk all the ingredients together until you can't find any big lump. Let it rest for some minutes.


In a pan or skillet, melt a little bit of butter and pour some mix. You can make smaller pancakes (about 10cm) or just cover a bigger surface. It should be around 5mm thick.


Cook at medium heat until small bubbles form on the surface and it can be flipped. Cook on the other side for another minute and serve.


And repeat, and repeat... until finishing the mix. It is useful to use two pans at the same time, it takes quite long to get them all ready. But it's so worth it!


Serve with a lot of different toppings or just your favourite one. Enjoy!!
